I love Mason jars. You may have seen my profession of love on Instagram yesterday, but if not, I really love Mason jars. They are one of the most versatile products out there, and I can’t get enough. I *might* have quite a few in my cabinets. But I digress. My most favorite thing to do with my Mason jars is meal prep! Salads, sauces, OVERNIGHT OATS, the options are endless. Speaking of overnight oats, I’ve got a delicious recipe to share today: Apple Pie Overnight Oats.
If you love apple pie, you are going to SWOON over these apple pie overnight oats. This recipe has all the yummy flavors of traditional apple pie but in a healthy breakfast form. It’s seriously heaven on earth. These overnight oats are super simple to make, dairy-free, and refined sugar-free. I can *almost* promise this will become a new favorite.
Apple Pie Overnight Oats
If you have ever made overnight oats before then you know it is one of the easiest things to whip up. This recipe is no different. Dump, mix, pour, and you are ready for breakfast (well, you might want to wait a bit so the oats soften up).
Overnight oats are one of my favorite breakfast choices. On weekday mornings, you can typically find me eating oats or smoothies. I like simple and easy in the mornings (read: I am 10000% NOT a morning person). Lately, these apple pie overnight oats have been my go to, and I can’t seem to get enough. Y’all know I love peanut butter, but right now, these apple pie overnight oats are winning me over.
This recipe also contains protein, fiber, and healthy fat which makes for a perfectly satisfying meal.
How To: Apple Pie Overnight Oats
The hardest part about this recipe is dicing the apple. But if you have an apple slicer, it makes things easier. Once the apple is sliced, then dice it up into smaller pieces. If you don’t have an apple slicer, no big deal. Just make sure to get rid of the core and seeds before dicing.
Once you have your apple diced, the rest of the recipe is dump and stir. So, take the remaining ingredients and place them in a bowl. Add in about 3/4 of the apple pieces (or all of it if you don’t want any on the top). Mix everything up really well. Take your two mason jars and fill them with the mixture. I used 6-ounce jar and filled them almost to the top. Arrange the remaining apple pieces on top, and add an extra sprinkle of cinnamon if ya want. Place in the refrigerator overnight (will last several days). Eat when you are ready for a yummy breakfast or snack!

This Apple Pie Overnight Oat recipe is the perfect healthy breakfast on busy mornings. It tastes just like apple pie and is perfect for meal prep.
- 1 cup unsweetened almond milk
- 2/3 cup rolled oats
- 3 tablespoons maple syrup
- 2 tablespoons chia seeds
- 1 scoop vanilla protein powder
- 1 teaspoon cinnamon
- pinch of salt
- 1 apple, small diced
1. Dice apple into small pieces.
2. Mix all ingredients together except 1/4 of the apple pieces (for the topping)
3. Divide the mixture evenly between two mason jars. Top with the remaining apple pieces.
4. Store in the refrigerator until ready to eat (will last several days).
