I created this easy one pot broccoli and sausage meal with one thing in mind: I needed a quick, healthy meal to feed my family, like, now. This dish isn’t super exciting and creative, BUT it’s quick, easy, tastes good, and is kid approved. WIN. As a mom with two little ones, there are times when I just need to get something quick and healthy on the table STAT. I don’t know about you, but my kids’ food preferences change on a daily (sometimes hourly) basis and it is sometimes a struggle to get them to eat their veggies! On top that, I’m typically trying to cook dinner during the witching hour, therefore, easy AND quick is a necessity sometimes.
On top of being easy, this dish is also super easy to customize. For example, if your family refuses to eat broccoli, you can sub in a different vegetable! Instead of rice, you could use quinoa or pasta, or omit the grains altogether. Additionally, I used garlic and red pepper flakes to season the broccoli, but you could use any spice you want (or have on hand). Heck, if you are feeling fancy, you can top that bad boy with some Parmesan cheese.
One Pot Broccoli and Sausage
One thing to note, when using frozen veggies, make sure to drain any excess water before and after cooking. You don’t want to turn those vegetables into mush. Unless you do, then no need to drain ;). I defrosted the broccoli in the microwave with a couple tablespoons of water, so I drained it using a colander before placing in the saute pan. However, if you use fresh broccoli, this step isn’t necessary. Additionally, I drained any excess water that collected after sauteing the broccoli.
Once your broccoli is cooked, scoot it over to the side, and add in the sausage. I used chicken sausage, but you could use any kind of sausage you want. Personally, I think kielbasa would be really good! Cook the sausage until it is warmed through and browned on the outside.
THAT’S IT. I served my sausage and broccoli with brown rice. Trader Joe’s carries a precooked frozen brown rice which is what I used for this meal. I put the bag of rice in the microwave for three minutes, pulled it out, and portioned it on our plates, THAT WAS IT. Easiest meal ever. My kids even ate it. Okay, my five year old devoured it. My two year old did not, but she will only eat raspberries and pepperonis at the moment, so ya know, ya win some and ya lose some.

- 1 16 oz frozen broccoli (or fresh!)
- 1 package chicken sausage
- 1 tbsp ghee/butter/olive oil
- 1 tsp garlic powder
- 1/2 tsp red pepper flakes
- salt and pepper to taste
- grain of choice (optional)
1. Defrost and drain broccoli, if using frozen.
2. Heat butter or oil in pan over medium heat, once hot, add broccoli, spices, and salt and pepper.
3. Cover and steam broccoli until cooked and bright green (about 2-4 minutes).
4. If there is any excess water in the pan, be sure to drain it.
5. Move broccoli to the side and add sausage to the pan. Cook until warmed through.
6. Serve with rice, quinoa, or pasta! (optional)
