I am always on a mission to find easy and healthy lunch ideas. A few weeks ago, I had a few chicken thighs that needed to get eaten so I whipped up this delicious and healthy Ranch Chicken Salad. The ranch seasoning adds so much flavor. I used homemade seasoning, but you definitely do not have to. Although, my ranch seasoning recipe is easy to throw together (use my homemade dairy free ranch dressing recipe, just don’t add the vinegar and olive oil). The recipe makes 4 servings so it is perfect to throw together for quick lunches throughout the week. I’m looking at you, meal preppin’ peeps!
Healthy Ranch Chicken Salad
My favorite way to serve this chicken salad is on a toasted everything bagel with a big ‘ole handful of spinach. Though, I suspect arugula would also be super tasty. BUT, the wonderful thing about chicken salad, you can basically serve it with anything and it is delish: on a wrap, on a bed of greens, with a bagel, sandwiched between two pieces of bread, or even by itself.
Side note: I used Skinnytaste’s bagel recipe to make my very own homemade bagels (and I used my brand new air fryer!) I STRONGLY recommend trying out these bagels. I’m slightly obsessed.
This recipe can also be made dairy free, just replace the Greek yogurt and ranch seasoning mix with my homemade dairy free ranch dressing.
When I make chicken salad, I typically roast my own chicken. It’s cheaper, and I can flavor it any way I want. However, you can also use a rotisserie chicken. Also, thighs, breasts, and tenders all work perfectly.
P.S: Did you know you can use your mixer to easily shred chicken? Life changing. All you do is place the chicken in a bowl, turn the mixer on and let it do all the work. This works best with a stand mixer, but a hand mixer works great also. So easy. I highly recommend shredding chicken this way, unless you need a good arm workout. Then, do it the old fashioned way.
Prepare the chicken:
I try to buy the cheapest chicken possible. I really love Purdue because they are cost effective and don’t use any hormones or additives. In a perfect world, I would buy all free range and/or grass fed meat, but money doesn’t grow on trees, so I just do the best that I can. (Stressing over this stuff causes just as much harm to our bodies as toxins, in my opinion, so just do the best you can). Okay, moving on.
Season your chicken (I use salt, pepper, and garlic powder. Sometimes I even add turmeric, paprika, onion powder etc.)
Roast at 400° for 30 minutes or so.
Small dice the chicken and put in a bowl.
The Chicken Salad
Add the yogurt and ranch seasoning to the bowl and mix it up. Can you believe how simple that is?

- 3 cups cooked chicken, small diced *or shredded
- 1/2 cup plain Greek yogurt
- 2 tablespoons ranch seasoning
1. Place chicken in a bowl.
2. Add Greek yogurt and ranch seasoning.
3. Mix until thoroughly combined. Enjoy!
