Where are all my meal prep folk? I’ve got the perfect recipe for you today. A yummy, healthy baked oatmeal cooked right in a single serve mason jar. Whip it up. Pop it in the fridge. And when you are ready to eat, pop it in the microwave for a quick breakfast!
I am always on the hunt for breakfast recipes that contain these two criteria:
- Quick AND healthy. Tastes delicious is also pretty important.
- My kids will eat it.
This recipe is a WINNER. It is so easy to whip up, is full of blueberry and peanut buttery goodness, and is a filling and healthy breakfast for my kids (and me and hubby).
Mason Jar Peanut Butter Blueberry Baked Oatmeal
Okay, so the title of this recipe may be a little on the long side, but don’t let that scare you away! It is literally a five-step process. And the best thing about this recipe: you bake it AND store it in mason jars.
Okay, so the first thing you want to do is gather all the ingredients. It makes everything so much easier and quicker when you already have everything you need right in front of you. Also, preheat that oven!

How to make Mason Jar Peanut Butter Blueberry Baked Oatmeal
You should have all the ingredients right in front of you at this point. And your oven should be preheating to 375°. Next, you will take all the ingredients and place them in a bowl. Mix until everything is incorporated.
Now take your mason jars (I use 6-ounce jars). Spray them with coconut oil. If you don’t grease the jars, it will be a nightmare to clean. Trust me, I learned the hard way. Once the mason jars are greased, fill each jar about 3/4 full with the oatmeal mixture. Depending on the size of your jar, this should be 5 jars. Place jars on a cookie sheet and bake for 25-30 minutes.
That’s it. Now you have some yummy individual portioned Mason Jar Peanut Butter Blueberry Baked Oatmeal. Cover the jars with a lid or plastic wrap or foil. SOMETHING. Then store in the refrigerator until ready to eat.
Remove lid and microwave for 45 seconds or so. ENJOY.
An easy, healthy meal prep recipe that is perfect for breakfast.
- 2 cups rolled oats
- 2 eggs
- 1 cup blueberries
- 1 cup almond milk
- 1/2 cup maple syrup
- 1/2 cup peanut butter powder
- 1 teaspoon baking powder
- 1 teaspoon vanilla
1. Preheat oven to 375.
2. Mix all ingredients together in a bowl.
3. Pour evenly into 5 mason jars, about 3/4 way full. Make sure to grease your jars first (I use coconut oil).
4. Bake for 25-30 min.
5. Once the jars are cool to the touch, place a lid on and store in the refrigerator.
To reheat: Remove lid from the mason jar and microwave for 1 minute.
