Alright, I have a confession: kale salads are NOT on my list of favorites. I know, gasp. I mean, are you even healthy if you don’t eat raw kale? Kale chips and cooked kale I’m fine with, but raw kale just doesn’t do it for me. However, knowing that kale is a super food and can basically cure anything (hahaha), I was determined to find a way to make it work. Luckily, I came across a trick that changed the raw kale game for me: marinade and massage the heck out of that stuff. It breaks down the fibers and makes it a little more manageable to eat (for me at least). So, do yourself a favor and massage that kale! In light of this, it led me to create my new favorite salad: Honey Dijon Pomegranate Kale Salad.
In addition, let’s talk about kale real quick. Kale is all the hype right now (and has been for a while now) and for good reason. Kale is low in calories, has ZERO fat, and is high in fiber (this is really good for digestion and aids the body in the detoxification process!) Not to mention, it is high in iron, so this is a great food to add to your diet if you are anemic. Equally, kale is high in vitamins A, C, and K, and has a ton of anti-inflammatory and antioxidant properties. Furthermore, it has also been said that kale is higher in calcium than a cup of milk. I’m sure you could write a complete dissertation on all the amazing qualities of kale, but I’m going to keep it simple and straight forward and stop here. In short, y’all are smart people. Go eat your kale and live forever. 😉
Honey Dijon Pomegranate Kale Salad
Okay, moving on. Let’s talk about this Honey Dijon Pomegranate Kale Salad. Can y’all tell I am on a pomegranate kick right now? These tiny little seeds add the perfect crunch and tang to this salad. They are the perfect replacement for croutons, if you crave a crunch when you eat salads. Equally important, THE DRESSING IS HEAVENLY. It’s sweet and tangy and oh so delicious. Furthermore, this salad is loaded with superfoods: kale, pomegranate, and AVOCADO (insert heart eyes emoji!). Avocado is full of healthy fats and is insanely nutrient dense, plus the creamy texture makes it an amazing addition to this tangy salad.

- 2 cups kale
- 6 ounces cooked chicken*
- 2 tbsp pomegranate seeds
- 1/2 avocado
- Pomegranate Honey Dijon Dressing:
- 2 tsp olive oil
- 1 tsp dijon mustard
- 1 tsp pomegranate juice
- 1 tsp honey
1. Whisk all dressing ingredients together in a small bowl.
2. Tear kale leaves into small bite size pieces, making sure to remove the tough rib. Place in a bowl.
3. Pour dressing on kale leaves and using your hands massage the dressing into the kale making sure each leaf is covered. You will want to massage the kale until the leaves are somewhat wilted.
4. Top the kale leaves with the chicken, pomegranate seeds, and avocado.
*I typically buy precooked grilled chicken from Trader Joe's, but you can also bake or grill your own chicken to use!
