Y’all. I have fallen in love with overnight oats. They are easy, nutritious, and filling. It’s basically the easiest thing ever: you mix the ingredients together, pop it in the fridge overnight (clever name, huh?), and boom you have breakfast (or a snack) ready to grab and go in the morning. Perfect for all you busy ladies out there. No more excuses for missed breakfasts, convenience store crap (for lack of a better term, sorry), or expensive Starbucks breakfast (sorry Starbucks, I love you, but you are not cheap). Overnight oats are the answer to your no time in the morning, running around like a mad woman breakfast woes.
Pomegranate Overnight Oats
There are a plethora of ONO recipes out there (peanut butter, hello lover!), but I think you should try this one first. Like, you need to stop what you are doing right this minute and make these Pomegranate Overnight Oats right now. They are creamy, dreamy, and absolutely delicious. Oh, they are pretty easy too. Y’all know I like easy. Also, it makes 3 servings. So, breakfast is taken care of for the next three days. Score. Unless, you are willing to share. But, I’m guessing you will probably be hoarding these oats all to yourself.
I love, love, love pomegranate seeds. Not only are they packed with healthy benefits, but the sweet and tart flavor makes it a versatile ingredient. They have a bit of a crunchy texture when eaten, which I love paired with creamy oats (obviously!) or on a salad. They are loaded with fiber, potassium, vitamin C, and vitamin K. Pomegranate juice (make sure it is 100% juice without any added sugars or fillers) is also known to have an abundance of antioxidants. It’s also been listed as an aphrodisiac food, if you are into that kind of thing. 😉 Are you ready to chow down on some pomegranate yet??

These creamy and nutritious oats will be sure to start your morning off right!
- 1 cup rolled oats
- 3/4 cup unsweetened almond milk*
- 1/2 cup pomegranate juice (100% juice)*
- 1 scoop vanilla protein powder*
- 1 tbsp honey or maple syrup
- 1/2 cup pomegranate seeds
1. Mix all ingredients together until smooth and creamy.
2. Separate mixture into three containers. I use mason jars.
3. Store in refrigerator overnight and up to one week.
4. Top with additional pomegranate seeds right before serving.
*Can use any milk of your choice.
*Can just use milk of choice, omitting the pomegranate juice. But I prefer adding the juice because it boosts the flavor of the oats!
- *I use Tone It Up protein powder, but any will do. Just make sure the ingredients are clean and there isn't a lot of sugar. However, this can be omitted.
*PRO TIP: Right before serving, add a little more milk to make the oats creamier (if needed).
