A couple of weeks ago, I FINALLY made it to our local farmers’ market. I was seriously like a kid in a candy store. SO MANY AMAZING, FRESH, IN SEASON PRODUCE. Sorry for yelling, but I was just so excited. I made it home with a pretty good bounty, but my two favorite items: bread and tomatoes. There is nothing quite like local, in season tomatoes. I think that I have mentioned before how much I love tomatoes? Also, fresh, homemade bread. Needless to say, after arriving home with these goodies, I didn’t want what I had planned for dinner. So, I created this amazingly fresh and delicious Tomato Crostini.
Farmers’ Market Tomato Crostini
This recipe is so incredibly easy to throw together, and I can guarantee it will be a hit. It works great as a meal, a snack, or an appetizer.
I’m almost embarrassed to be writing this as an official recipe because it is so easy. But I’m obsessed, and I think it is worth sharing.
I used 1 large tomato, diced. BUT you can even use cherry or grape tomatoes. Place the tomato in a bowl, add the olive oil, and salt. Mix well. Set aside or place in the refrigerator while you work on the bread.
This part is critical. Trust me. Slice your bread into the thickness your heart desires. Cut a garlic clove in half and rub it all over both sides of the bread. I recommend using a cast iron skillet, but if you don’t have one (YOU NEED ONE), a regular skillet will work fine. Melt the butter in the pan and “grill” the bread until it is crispy and golden. GRILLED BREAD IS LIFE. If you have not eaten bread in this manner, prepare for your life to be changed.
Now, all you have to do is spoon the tomato mixture on the bread. Make sure you drizzle some of the juice on as well. Eat and go to food heaven. Make sure to let me know if you try this recipe.

Farmers' Market Tomato Crostini is a refreshingly delicious, easy recipe that is perfect as a snack or a meal.
- 1 large tomato, diced
- 1-2 tablespoons olive oil
- 1 teaspoon salt
- 4-6 slices crusty bread *French, Ciabatta etc
- 1-2 garlic cloves
- 1-2 tablespoons butter
1. Mix tomato, olive oil, and salt in a bowl. Set aside to marinate.
2. Slice the bread into the thickness of your liking. Start heating skillet.
3. Slice the garlic clove(s) in half and rub the bread with the clove of garlic. Making sure to get both sides of the bread.
4. Melt the butter in the skillet. Grill bread until it is crispy and golden.
5. Spoon the tomato mixture on to the bread and EAT.
