Ingredients

  • 1 cup rice
  • 2 cups water
  • 1 can black beans *drained and rinsed
  • 1/2 cup broth *vegetable, chicken, or beef

Salsa

  • 1 large tomato, diced *or 3 Roma tomatoes
  • 1 green pepper, diced
  • 1/4 onion, diced *about 1/4 cup
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic
  • 1/2 teaspoon cumin
  • 1/2 lime, juiced

Guacamole

  • 2 avocados
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic
  • 1/2 lime, juiced

Instructions

Rice

  1. 1. Cook rice according to package directions. 

Black Beans

  1. 1. Combine chicken broth and black beans in a pot on the stove. Cook until heated through.

Salsa

  1. 1. Combine all salsa ingredients until well combined. Refrigerate until ready to use.

Guacamole

  1. 1. Scoop out the "meat" of the avocados and combine with the rest of the guacamole ingredients. Use a fork to smash the avocados. Mix until combined and the consistency of your liking.
