Mason Jar Peanut Butter Blueberry Baked Oatmeal

An easy, healthy meal prep recipe that is perfect for breakfast.

Ingredients

  • 2 cups rolled oats
  • 2 eggs
  • 1 cup blueberries
  • 1 cup almond milk
  • 1/2 cup maple syrup
  • 1/2 cup peanut butter powder
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla

Instructions

  1. 1. Preheat oven to 375.

  2. 2. Mix all ingredients together in a bowl.

  3. 3. Pour evenly into 5 mason jars, about 3/4 way full. Make sure to grease your jars first (I use coconut oil).

  4. 4. Bake for 25-30 min.

  5. 5. Once the jars are cool to the touch, place a lid on and store in the refrigerator.

  6. To reheat: Remove lid from the mason jar and microwave for 1 minute.
