1. Whisk all dressing ingredients together in a small bowl.
2. Tear kale leaves into small bite size pieces, making sure to remove the tough rib. Place in a bowl.
3. Pour dressing on kale leaves and using your hands massage the dressing into the kale making sure each leaf is covered. You will want to massage the kale until the leaves are somewhat wilted.
4. Top the kale leaves with the chicken, pomegranate seeds, and avocado.
*I typically buy precooked grilled chicken from Trader Joe's, but you can also bake or grill your own chicken to use!
